Vegetarian Brussels Hash

1/2 lb. baby Brussels sprouts

1lb. baby yellow potatoes

2 tbsp. avocado oil

1 clove minced garlic

1/4 white onion diced

Salt & Pepper to taste

4 eggs

Trader Joe's Everything but the Bagel Seasoning

Instructions:
Pour one tbsp. of the avocado oil in a skillet over medium heat. Wash and dice the potatoes then place them in the warm oil with salt & pepper. Cover the potatoes and let cook for about 15 minutes, stirring occasionally until they are soft.

While the potatoes are cooking wash and peel the Brussels sprouts. Cut the ends off and then place them in a food processor. Process on high for about 5 seconds. You want it to be chopped very finely, but not mush. Pour the Brussels, diced onion, minced garlic, and second tbsp. of avocado oil in with the potatoes and let cook for about 8 more minutes over medium heat.

While that is finishing cooking, fry the eggs (I used more avocado oil to fry them in). Serve the eggs over the hash and top it all with Everything but the Bagel Seasoning. Enjoy!
