Chicken & Asparagus Skewers

I guess it's always grilling season when you live in San Diego. Even in the middle of January! These skewers were a fun new way to get my veggies + lean protein in! I topped them with a balsamic glaze and if you want they would be delicious served with a side of quinoa or diced tomatoes. Yum!

Ingredients:

5 fresh organic chicken strips

1 bunch of asparagus

Avocado Oil Spray

Salt & Pepper

Balsamic Glaze

Method:

Wash and chop the asparagus into ~1 inch pieces. Chop the chicken into cubes. In separate bowls, spray the chicken and asparagus with avocado oil. Top with salt + pepper to liking. Mix well and place on the skewers. Place on grill, turning halfway through cooking time. Leave on grill until chicken is cooked thoroughly. Top with a balsamic glaze, enjoy!
