Spicy Mushroom & Spinach Meatballs

This is one of my favorite recipes to date. These meatballs are full of veggies and pack a punch of flavor! I seriously think this is a recipe I could eat on repeat weekly. These are honestly so good you could eat them alone, but I chose to serve mine with Banza Pasta! You don't actually have to use spicy tomato sauce to make these, but I truly believe that's what made them so delicious. I linked the one I used here.

Plan on packing leftovers because these taste just as good reheated. All of the flavors mix together seamlessly, & I can't wait for you to try!

Ingredients:

1 lb. ground turkey

1 tbsp. avocado oil

8 oz. baby bella mushrooms

2 handfuls of baby spinach

1 egg

1 tsp. dried parsley seasoning

1 tsp. dried basil seasoning 1 jar spicy tomato sauce

Salt + Pepper to taste

Method: Preheat oven to 400°F. Warm the avocado oil over medium heat in a cast iron skillet. While that is heating, wash and finely chop the mushrooms. Add the mushrooms and the spinach to the skillet. Sauté for about 8 minutes over medium heat until the mushrooms are cooked through and the spinach is wilted.

In a mixing bowl add the ground turkey, egg, parsley, basil, salt & pepper. Once the veggies cool a bit add them to the mixing bowl as well. Mix the ingredients and form balls to place back in the cast iron skillet - I formed eleven meatballs. Once they are in the skillet pour the jar of spicy tomato sauce around each of them. Place in the oven for 30 minutes. Enjoy!
