Peach & Prosciutto Salad

This PEACH & PROSCIUTTO SALAD screams summa! It’s full of anti-inflammatory ingredients like kale and turmeric, and fresh flavors like peach and lemon. It’s officially hot hot hot in SD, so I have a feeling a lot more of these salads will be in my future (although believe it or not it’s really rare I eat salad as a meal).

Salad -
1 bunch of kale (+1 tbsp avocado oil & bit of salt)
2 slices of prosciutto - tear into small pieces
1 peach - cut into cubes
2 oz fresh mozzarella - cut into cubes
Handful of heirloom cherry tomatoes - sliced in half
Drizzle of balsamic glaze

Dressing -
Juice of 1/2 lemon
1/8 cup avocado oil
1/8 tsp. turmeric
1 tbsp. honey
Salt & Pepper
Place all ingredients in a small bowl and whisk together.

Instructions -
For the salad - remove the kale from the stems. Chop it into small pieces and drizzle with avocado oil + a dash of salt. Massage the kale with your hands for 2-3 minutes. This makes it easier to chew and digest! Once the kale is massaged, add each each ingredient on top, and pour on the dressing. Serves ~3
