Spicy Sesame Noodles & Broccoli
I absolutely love Din Thai Fung spicy sesame noodles, and I’ve really been wanting to recreate a similar dish at home! This bowl of soupy noodles is so comforting and perfect to cozy up with. Something about them makes me want to curl up on the couch and watch Netflix while eating this with chopsticks. Just me??? Okay…
Ingredients:
Noodles + Sauce -
1 box rice noodles
2 tbsp. sesame oil
1 clove minced garlic
1 tbsp. rice vinegar
1 tbsp. coconut sugar
2 tbsp. coconut aminos
3 tbsp. sweet red chili sauce
1/4 tsp. ginger powder
1/4 tsp. red chili pepper flakes
Broccoli -
1 head of broccoli
1 tbsp. avocado oil
Juice of 1/2 lemon
Salt and Pepper
Toppings -
1/8 cup green onions
Sesame seeds
Instructions -
Preheat oven to 400°F. Wash and chop the broccoli into florets. Coat it with the avocado oil, lemon juice, and add salt and pepper to taste. Spread evenly on a parchment lined baking sheet and bake for 25 minutes.
Cook the rice noodles according to the box. While the noodles are cooking prepare the sauce! Add sesame oil and garlic to a pan on the stovetop over medium heat. Let sauté for 2-3 minutes and then add the rest of the sauce ingredients. Stir over low-medium heat for 3-5 more minutes. When the noodles are done drain them and add them to the sauce, as well as the broccoli. Mix well and top with sesame seeds + green onion - enjoy!
