Cajun Shrimp Tacos

You wont believe me but these seriously take 15 minutes to make and they are fire! I came home from work the other day hangry & these truly saved the day. The taste of the spicy shrimp mixes perfectly with the crunchy purple cabbage and jalapeno dressing! These are for sure going to be on repeat this summer in my home.

Shrimp -
1 lb raw shrimp
1 tbsp. avocado oil
2 tsp. Cajun creole seasoning


Slaw -
1/2 cup plain Greek yogurt
1/2 jalapeño
1/4 cup fresh cilantro
Juice of 1/2 lemon
1 tbsp. avocado oil
Dash of salt & pepper
1.5 cup purple cabbage

Additional -
Cassava tortillas
Heirloom tomatoes

Instructions -

For the slaw, place all ingredients expect cabbage in a high speed blender. Blend until smooth and then pour over chopped cabbage. For the shrimp, peel them and place in a large bowl with Cajun seasoning mixing well. Place avocado oil in a cast iron skillet over medium high heat. Add shrimp and let them cook for about 2 minutes on each side or until they are cooked through. Load up tortillas with shrimp, slaw, and tomatoes!
