Cajun Shrimp Tacos
Shrimp -
1 lb raw shrimp
1 tbsp. avocado oil
2 tsp. Cajun creole seasoning
Slaw -
1/2 cup plain Greek yogurt
1/2 jalapeño
1/4 cup fresh cilantro
Juice of 1/2 lemon
1 tbsp. avocado oil
Dash of salt & pepper
1.5 cup purple cabbage
Additional -
Cassava tortillas
Heirloom tomatoes
Instructions -
For the slaw, place all ingredients expect cabbage in a high speed blender. Blend until smooth and then pour over chopped cabbage. For the shrimp, peel them and place in a large bowl with Cajun seasoning mixing well. Place avocado oil in a cast iron skillet over medium high heat. Add shrimp and let them cook for about 2 minutes on each side or until they are cooked through. Load up tortillas with shrimp, slaw, and tomatoes!
