One Pan Chicken Fajita Bowls with Cilantro Lime Rice

 
 
 

We all know and love one pan sheet meals. I mean how can you not?! They are so simple to make, but if you make them good they have a lot of flavor. I am a big fan of keeping these super simple, but not skimping on the taste. Cue this chicken fajita one pan sheet meal! I took it a step further and made it into a bowl using cilantro lime rice. It’s sooo good.

I remember when I was younger there was a Mexican restaurant in my hometown, Los Toribio, that I would visit often with my family. We all loved it and so did everyone else! We would go in big groups on the weekends, after sports games, and just for the heck of it. I have vivid memories of everyone ordering fajitas for the table. They would come out sizzling and man they smelled so good. The flour tortillas were warm and I would load them up with chicken, veggies, sour cream, and lettuce. My mouth is watering as I type this!

While these bowls aren’t quite as theatrical as the piping hot plates of fajitas, they are certainly still delicious. You can get creative with the toppings as well! You could add black beans, sour cream, cheese, and more. I kept mine super simple with guacamole because it already has so much good flavor. You can find the video for this recipe here.

Chicken - I used chicken for this recipe, but I think shrimp or steak would be equally as good! If you opt for shrimp you might need to adjust the cooking time.

Bell peppers and yellow onion - Bell peppers and onion are just a classic for fajitas. I like to do one red and one green just to make it colorful!

Fajita seasoning - You can totally buy a pre-made fajita seasoning, but it’s also really easy to make at home! You just need a few staple spices mixed together and you’ve got a great seasoning.

Cilantro lime rice - Frozen rice is my go to. It’s so easy to make and super versatile. I used the frozen jasmine rice from Trader Joe’s for this recipe and then added some fresh cilantro and lime juice to add a great flavor!

Chicken Fajita One Pan Sheet Meal with Cilantro Lime Rice

This chicken fajita one pan sheet meal is already incredible, but I paired it with cilantro lime rice to take the flavor up a notch and make hearty bowls. Everyone will love it!

Ingredients

Chicken Fajita One Pan Sheet Meal
  • 1.5 lbs boneless skinless chicken breast
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 yellow onion
  • 2 tbsp olive oil
Fajita Seasoning
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp coriander
  • 1/4 tsp salt
Cilantro Lime Rice
  • 1 10 oz bag frozen Jasmine rice
  • 1 tbsp fresh cilantro chopped fine
  • Juice of 1/2 lime

Instructions

  1. Preheat oven to 425°F.
  2. Mix together all ingredients for fajita seasoning in a small bowl and set aside.
  3. Cut chicken into ~1" strips. Slice bell peppers into strips, and thinly slice onion.
  4. On a large parchment lined baking sheet, place chicken on one half and veggies on the other.
  5. Drizzle with olive oil and sprinkle seasoning across evenly. Mix up and make sure chicken and veggies are coated evenly.
  6. Bake for 15 minutes, mix up and bake for 10 more.
  7. While the chicken and veggies are cooking, make the rice and mix in the cilantro and lime.
  8. To serve build a bowl with rice, chicken, veggies, and toppings of choice!
