Lemon Arugula and Cheese Tortellini
You know those long days where you can’t even fathom chopping veggies? Yeah, we’ve all been there. Sometimes at the end of a day you just want a super simple meal and that’s exactly what this is. I am not kidding when I say you can make this meal in 10 minutes, but it’s got a lot of flavor! I honestly love mixing greens (or any veggies) with pasta. You can come up with so many combinations! Simple and versatile, we like it.
Arugula - For this dish I love the light fresh taste of arugula. The bitterness is toned down with the other flavors.
Lemon juice - All you need is a little bit of lemon juice to make a simple flavorful “dressing.”
Fresh parmesan cheese - You must use fresh parmesan for this recipe. It’s just not the same without it! I used grated and shaved for this recipe.
Cheese tortellini - There are so many great tortellini flavors, but for this dish I really just love a good ol’ classic. I used a ricotta filled tortellini and it was the perfect compliment to the arugula and lemon flavor.
Lemon Arugula and Tortellini
Ingredients
- 2 large handfuls of arugula
- Juice of 1/2 lemon
- Drizzle of olive oil (~1 tbsp)
- Dash of salt
- Fresh grated parmesan
- 1 (9 oz) pack of tri color cheese tortellini
- 1 tbsp butter
- Fresh shaved parmesan
Instructions
- Add arugula, lemon juice, salt, olive oil, and grated parmesan (measure this with your heart) to a bowl. Use your hands to lightly toss together.
- Prepare tortellini according to package instructions. Drain and immediately add butter, mix together so that the butter melts in with the pasta.
- Place some arugula in a bowl and add tortellini on top.
- Top with shaved parmesan and cracked black pepper.
- Mix up and enjoy!
