Best Ever Chocolate Chunk Banana Bread

 
 
 

This weather has been all over the place. A week and a half ago it was 80 degrees outside, two days later it snowed, a few days later was in the 60’s, and this past weekend back to the 40’s with wind and rain. It’s giving me whiplash. Good thing banana bread is always in season, because I had 3 overly ripe bananas that needed to be used this weekend! My grandma always makes the best breads so I called her to get her banana bread recipe, and I started baking!

I know there are a million banana bread recipes on the internet, but hear me out. This one has chocolate chunks AND walnuts. It’s divine. Not too mention, recipes are better when they are made with love, and this one definitely is.

Overripe bananas - Make sure your bananas are slightly overripe. It will make the bread moist and add sweetness.

Chocolate chunks - Trust me on this, you want to buy a chocolate bar and chop it into chunks - it’s waaaay better than chocolate chips! I used this semi sweet chocolate bar from Ghirardelli.

Crushed walnuts - This bread is seriously loaded with all the goods, including walnuts. They add so much to the texture and the flavor!

Best Ever Chocolate Chunk Banana Bread

I know there are a million banana bread recipes out there, but this one is my grandmas and it's made with love! Full of chocolate chunks and walnuts, it's loaded with good flavor.

Ingredients

  • 1 stick unsalted butter room temp
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup full fat Greek yogurt
  • 1 tsp vanilla
  • 1.5 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 overripe bananas
  • 1 (4 oz) bar Ghirardelli semi sweet baking chocolate bar
  • 1/3 cup crushed walnuts

Instructions

  1. Preheat oven to 350 °F.
  2. Add butter, sugar, and eggs to a bowl. Use a hand mixer to beat together.
  3. Add in Greek yogurt and vanilla, continue to to use hand mixer to mix together.
  4. Add in flour, baking soda, and salt. Stir in with a spatula.
  5. In a separate bowl mash bananas with a fork or a potato masher. Roughly chop chocolate bar into chunks.
  6. Add bananas and about 3/4 of the chocolate chunks to the batter. Stir in with spatula.
  7. Finally, stir in walnuts.
  8. Transfer batter to a well greased loaf pan. (Pro tip: save the butter wrapper and use it to grease the pan).
  9. Spread the rest of the chocolate chunks on top.
  10. Bake for 1 hour. (Check after about 50 minutes, depending on your oven it might need a little more or less than one hour).
  11. Best served fresh and warm!
