Spinach Artichoke Boursin Pasta
In case you haven’t noticed, pasta is on my menu about once a week. It’s just so good and so versatile! This dish is the perfect example of how creative you can get. I absolutely love spinach artichoke dip, always have. If it’s ever on a menu as an appetizer I am 1000% ordering it. The other day I thought, what if I tried to make a spinach artichoke pasta sauce? I often get creative in the kitchen and try to combine things I love, and they usually turn out pretty good! Including this spinach artichoke Boursin pasta sauce. I only recently tried Boursin for the first time, but I knew the creamy garlic cheese would be the perfect addition to this sauce. I hope you love it!
Boursin garlic and herb cheese - Like I said, I’m new to the Boursin bandwagon. I have been eating is as a snack with crackers, cucumber slices, spread on bread, and with pita chips. It’s hard not to love. The soft creamy texture melted beautifully in this sauce, and it offers a similar texture to cream cheese used in traditional spinach artichoke dip!
Artichoke hearts - Artichoke hearts are so underrated. If you haven’t tried my crispy artichoke chips you’ve definitely got to give them a try. Okay okay, back to this recipe. They are a must to give this the true feeling of spinach artichoke dip! Just buy a jar and drain the juice, simple enough.
Spinach - Spinach is a go to in so many pasta dishes. Fresh is best for this!
Tagliatelle pasta - I love these wide pasta noodles! Very similar to fettuccine and can easily be swapped out.
Spinach Artichoke Boursin Pasta
Ingredients
- 1/2 lb tagliatelle pasta
- 1 tbsp olive oil
- 1 12 oz jar of artichoke hearts
- 1 5 oz pack Boursin garlic and herb cheese
- 2 large handfuls spinach
- Cracked black pepper
Instructions
- Cook pasta according to package, save 1 cup pasta water before draining. Drizzle pasta with a little bit of olive oil so it doesn’t stick and set aside.
- Drain artichoke hearts and cut into thirds. Heat olive oil in skillet over medium heat. Add artichokes to skillet and let sauté ~2 minutes.
- Add Boursin cheese to skillet and stir continuously until melted.
- Slowly add in pasta water and continue mixing. For reference I only used ~1/2 cup of the pasta water. Let simmer 1-2 minutes.
- Stir in spinach let simmer 2 minutes, and then add in pasta.
- Removed from heat and top with cracked black pepper.
