Granola Butter Fudge Bars

Ooooooh my GOSHHHHH!!!!! When I tried these bars I was honestly speechless. They turned out better than I could have ever expected. Super simple to make, so delicious, and I don’t think I will ever be able to go without having them in my refrigerator now. If you don’t have access to collagen or adaptogens, feel free to leave them out! They aren’t 100% necessary. Collagen adds protein, and ashwagandha is known to reduce physical & mental stress. So they definitely have some added benefits! If you do not have granola butter, you could probably sub for almond butter, however I have not tried it that way! If you’ve never tried granola butter, now is a great time!

Ingredients:

Crust:

1 cup oats

1 cup all purpose gluten free flour

1/4 tsp. baking soda

1/4 cup room temp. butter

1/2 cup greek yogurt

1/4 cup coconut sugar

1/4 tsp. cinnamon

1/4 tsp. salt

Fudge:

1 tbsp. cacao powder

2 tbsp. Ancient Nutrition collagen powder (code “allaboutwell” gets you a lil discount at checkout)

1 tsp. ashwagandha

1/2 tsp. cinnamon

1/4 tsp. salt

1/2 cup coconut oil

3/4 cup granola butter

1 tbsp. maple syrup

1/2 tsp. vanilla extract

Instructions:

Preheat oven to 350°F. Place all ingredients for the crust in a food processor and mix until it is well combined. Place the dough in a parchment lined 8x8 baking dish. Spread out evenly and press down with your hands. Bake the crust for 30 minutes and then sit aside to cool.

For the fudge, place the coconut oil, granola butter, syrup, and vanilla in a sauce pan over low heat. Stir until it has all melted together. Add the cacao, collagen, ashwagandha, cinnamon, and salt to the pan and continue to stir until it is all mixed well.

Pour the fudge mixture over the crust, and place the pan in the freezer for one hour. Remove it from the freezer and pull the parchment paper by the sides to get it out of the pan. Place on a large cutting board and cut into squares. Eat immediately or refrigerate until you are ready to eat them! Do not leave at room temp, they will melt! Enjoy!!!
