Elevated Chocolate Chip “Cookie Dough” Bites

If you ever told me I could replace the delicious taste of cookie dough with chickpeas I wouldn't believe you. That is until I made these yummy little Peanut Butter Chocolate Chip Cookie Dough Bites. These little bites pack a punch of protein and have more nutritional value than snacking on cookie dough alone (what... you don't ever do that?!) They take hardly any time to make, and they last in the refrigerator for about 4 days.

Ingredients:-1 can chickpeas drained and rinsed-1.5 tbsp maple syrup -1/2 cup @lilyssweets dark choc baking chips -1/2 cup creamy runny peanut butter -1/4 tsp. pink Himalayan sea salt-2 tsp. @sunpotion ashwagandha -1 scoop @ancie…

Ingredients:

-1 can chickpeas drained and rinsed

-1.5 tbsp maple syrup 

-1/2 cup @lilyssweets dark choc baking chips 

-1/2 cup creamy runny peanut butter 

-1/4 tsp. pink Himalayan sea salt

-2 tsp. @sunpotion ashwagandha 

-1 scoop @ancientnutrition collagen 

-1 tsp. coconut oil

After you drain the chickpeas place then in a food processor or high speed blender. Blend them for 45 seconds to 1 minute until they are smooth. Add them to a large bowl with the rest of the ingredients (*only use 1/4 cup chocolate chips here!*) and mix well. Form balls and place on a parchment lined baking sheet. Melt the other 1/4 cup chocolate chips with the coconut oil, either over the stove or in the microwave, and drizzle on top. Place in the refrigerator for at least 10 minutes before eating, and keep refrigerated until you are ready for them. Enjoy!
