This time two years ago I was on my baby moon in Italy! That honestly feels like a lifetime ago, and I can’t believe how much has changed since then. We have a 1.5 year old silly little boy now, we moved to Atlanta, and I am 7 months pregnant with baby number 2 - it’s true what they say, time flies when you’re having fun! I love fall so much, and this year I feel extra nostalgic thinking of when I was pregnant the first time. So of course I had to pretend I was in Italy again (even though I am very far from it). One of my favorite dishes I ordered while there was gnocchi in a creamy pumpkin sauce. I can still remember the day perfectly! We took the ferry from Menaggio to Bellagio where we had the perfect day. We stopped in a cute little restaurant for lunch (aren’t they all cute little restaurants?!) and sat outside on the balcony. The pumpkin gnocchi was perfectly fluffy and creamy, and while I must admit mine isn’t as good, it comes pretty close. I mean come on, you can’t beat getting it straight from Italy! I hope you enjoy this recipe as much as I did, it is definitely going to be added to my fall rotation of easy weeknight dinners.

Creamy Pumpkin Gnocchi

This creamy pumpkin gnocchi is cooked right in a garlic, sage, and pumpkin sauce making it extra flavorful and fluffy. It has fresh parmesan cheese and crispy bacon bits, making it the perfect cozy and savory dish for the fall. It's rich, comforting, and full of flavor.

Ingredients

  • 1 tbsp. olive oil
  • 3 cloves minced garlic
  • 1 tsp. fresh sage, chopped fine
  • 1.5 cups vegetable broth
  • 1/2 cup pumpkin puree
  • 16 oz. gnocchi
  • 1/4 cup heavy cream
  • 1/2 cup fresh shaved parmesan cheese
  • Crispy bacon bits for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add fresh chopped sage and minced garlic, as well as salt and pepper to taste. Sauté for 1 minute, stirring. The garlic and sage will become fragrant.
  2. Pour in the vegetable broth and pumpkin puree. Whisk and bring to a low boil.
  3. Once boiling, stir in the gnocchi. Let simmer for 5 minutes, stirring occasionally. The gnocchi will become soft and fluffy.
  4. Stir in the heavy cream and fresh parmesan cheese and remove from heat.
  5. Garnish with more fresh parmesan cheese, fresh chopped sage, and crispy bacon bits.
