Pumpkin Spice Bread Pudding
If you enjoy bread pudding then you’re going to love this pumpkin spice version! I think bread pudding is such an underrated dessert, it’s so nostalgic to me! I wanted to add fall flavors with pumpkin and pumpkin seasoning. It did not disappoint and will be on repeat for all of the upcoming holidays!

Pumpkin Spice Bread Pudding
This pumpkin spice bread pudding is a warm, cozy dessert made with cubes of brioche bread and flavored with pumpkin. It's baked until golden and soft inside with a slightly crisp top, and then topped with a brown sugar pumpkin glaze. It's the perfect fall treat!
Ingredients
- 14 oz. braided brioche (day old), cut into 1" cubes
- 3 eggs
- 2 tsp. vanilla
- 2 cups sugar
- 3 tbsp. melted butter
- 1/3 cup pumpkin puree
- 1 tbsp. pumpkin spice
- 3.5 cups whole milk
Sauce
- 4 tbsp. butter
- 1 tbsp. pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup heavy cream
- 1 tsp. vanilla
Instructions
- Place the cubed bread in a large bowl and set aside.
- In a separate bowl whisk together the eggs, vanilla, sugar, melted butter, pumpkin puree, and pumpkin spice. Once that is whisked together add the milk and continue whisking until it is well combined.
- Pour the mixture over the cubed bread and use a spatula to gently mix. Let the mixture sit for one hour so that the bread absorbs the liquid.
- Pour the bread mixture into a casserole dish and bake at 375° for 55 minutes.
- When the bread pudding is done and cooling, prepare the sauce by whisking together all ingredients in a sauce pan over medium heat. Bring to a low boil, continuing to whisk, and then remove from heat. Let cool about 2 minutes and then pour on top of the bread casserole. Use a spatula or gently lift and turn the casserole dish to spread out evenly.
- Best served warm, and would be delicious with a scoop of vanilla ice cream!
