Apple Pie Oat Bars
We have really been on an oat bar kick in our house! I love that they are filling and nutrient packed, not too mention you can really get creative with the flavors. If you missed it, I’ve also made blueberry oat bars with white chocolate drizzle and pumpkin spice chocolate chip oat bars - both of which are incredible! Now that it is officially fall I am really leaning into seasonal flavors and nothing says fall like apple picking. Our little guy has been loving oat bars as a snack and he really likes baked apples so I knew I had to combine the two. Hence these delicious apple pie oat bars.
These bars have a moist texture and delicious flavor from the grated apples, applesauce, cinnamon, and honey. I used a honeycrisp apple because I think they are the most flavorful! We could have stopped there, but why would we?! We all know the best pairing with apples in the fall is caramel… and I’m a big chocolate girly, so I topped these with chopped Rolos to get both the chocolate and caramel flavor. These are great to meal prep for the week and keep on hand for breakfast or a snack. I hope you enjoy them as much as I do!

Apple Pie Oat Bars
These Apple Pie Oat Bars are made with sweet honeycrisp apples, smooth applesauce, warm cinnamon, and delicious honey all mixed together with a chewy oat base and finished with chopped Rolos for a gooey caramel chocolate topping.They are great to meal prep for breakfast or snacks throughout the week!
Ingredients
- 2 cups old fashioned oats
- 1 tsp. baking powder
- 1/4 cup milled chia seeds
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 2 eggs
- 1/3 cup unsweetened apple sauce
- 1/3 cup milk
- 1/4 cup honey
- 1 tsp. vanilla
- 1/2 cup (~1 medium size apple) grated honey crisp apple
- 8 Rolos , chopped up
Instructions
- Preheat oven to 350°F.
- Place oats, baking powder, milled chia seeds, cinnamon, and salt in a bowl and mix together with a spatula.
- In a separate bowl whisk together the eggs, apple sauce, milk, honey, vanilla, and grated apple.
- Pour the wet ingredients in with the dry ingredients and mix well. Set aside for 10 minutes to let the oats absorb some of the liquid.
- Pour the oat mixture into a parchment lined 8x8 baking dish, use a spatula to spread out, and then top with the chopped Rolos.
- Bake for 25 minutes. Once they are done baking let them cool completely before removing them from the pan. Cut into 8 bars.
Notes
These stay fresh longer if you keep them refrigerated, but I do like to heat them for a few seconds in the microwave before enjoying them!
