The only thing better than leaving cookies by the tree for Santa is leaving these chocolate marshmallow bars instead! I literally never buy marshmallows but the other day at the grocery store I saw these mini ones and I couldn’t resist grabbing them. Once I got home I couldn’t wait to bake something yummy. I’ve been exploring in the baking realm lately and I’ve really enjoyed using cassava flour. It tends to give the perfect cake like texture to baked goods. Mix that with the fluffy marshmallows baked inside (yes, they are inside the batter as well!) and you have a delicious little slice of heaven. Whoo!

Some notes on this recipe - I have not experimented making these with any other type of flour. Cassava flour is very unique in that it is super light and fluffy, so I am not sure how this would turn out with swaps. I used Califia Farms Better Half, it is dairy free but feel free to use a regular half and half. These are also not super sweet, if you prefer a sweeter dessert maybe add 1-2 tbsp. syrup.

Chocolate Marshmallow Bars

Chocolate Marshmallow Bars

These Chocolate Marshmallow Bars are gluten free, dairy free, and so fluffy + delicious!

Ingredients

  • 2 eggs
  • 1/2 cup coconut sugar 
  • 1/4 cup cacao powder
  • 1/4 cup ghee 
  • 3 tbsp. Califia Farms Better Half
  • 1/2 cup cassava flour
  • 1 tsp. baking soda
  • 1/4 tsp. pink Himalayan sea salt 
  • 3/4 cup mini vegan marshmallows + more for topping

Instructions

  1. Preheat oven to 350°F.
  2. Use a hand mixer to whisk together eggs, coconut sugar, cacao powder, ghee, and Better Half in a large bowl.
  3. Add in cassava flour, baking soda, sea salt and use a spatula to stir it all together. 
  4. Stir in 3/4 cup of the mini marshmallows. 
  5. Transfer batter to a greased 8x8 baking dish. 
  6. Top with additional marshmallows and lightly press them into the batter. Bake for 17 minutes.
  7. Let cool and cut into squares.
