Chicken Avocado Burrito

This chicken avocado burrito is one of my go to recipes from college, and I cannot believe I am just now making it and posting it to my website! I was super excited to try the Siete burrito size tortillas and I knew this would be the perfect recipe to test them out. They crisped perfectly and tasted delicious. If you don't have access to these tortillas, or just prefer a flour burrito size tortilla - go for it!

Ingredients:

3 oz shredded chicken (I used rotisserie)

Handful of baby kale

1/2 tbsp. mustard

1/4 cup freshly shaved parmesan

1/2 avocado cubed

1 burrito size tortilla

2 tsp. avocado oil

Instructions:

Mix first 5 ingredients in a bowl. Place in tortilla (tip: heat tortilla first so it doesn't break). Fold and place in a skillet with hot avocado oil. Let sit a couple of minutes on each side or until crispy. Enjoy!
