Strawberry & Granola Butter Quesadilla

I’m not kidding when I say this is the breakfast/dessert of my dreams. I literally had a dream about this recipe and hurried to make a note when I woke up of what was in it. All the way down to the coconut whip cream on top. This delicious warm wrap is stuffed with smashed strawberries and runny granola butter. YUM! Topped with coconut whip cream and powdered sugar for an added punch. Y’all I was drooooling making these & I hope you love them as much as I did!

Ingredients:

2 Siete Foods burrito size tortillas

Kween & Co granola butter

1 lb strawberries

Reddi Wip coconut whip cream

Powdered sugar

Instructions:

Cut strawberries in half. Place in sauce pan over medium heat and mash with a potato smasher. Let simmer about 5-6 min, stirring constantly. Remove from heat. In a large cast iron heat the tortillas so they do not break when you fold them. Remove tortillas and add 1-2 tsp coconut oil to pan over medium heat. On one half of tortilla spread granola butter (don’t hold back, it’s delish), and then spread the strawberries on top of that. Fold in half and place back in cast iron. Let simmer for about 3 minutes on each side or until tortilla gets a little crispy. Cut and top with whip cream + powdered sugar. Enjoy!!!!
