Vanilla Cake Balls

'Tis the season for sweet treats! If you've followed me for a while, you know I will fully admit that I'm not the best at baking. That said - I have a major sweet tooth and I actually love the process of baking. Sometimes it's better for me to stick with boxed goods though, and I'm happy there are so many options to choose from. For this recipe I used Simple Mills Vanilla Cake Mix! These turned out perfectly moist, and I personally think they would be delicious with a cup of coffee. Who says you can't have cake for breakfast?!

Ingredients:

For the cake:

1 box Simple Mills Vanilla Cake Mix

3 eggs

1/3 cup melted coconut oil (the box suggests grapeseed or vegetable oil, but I used coconut)

1/3 cup water

1 tbsp. vanilla extract

Icing:

1 package 8 oz. Kite Hill Plain Almond Cream Cheese

1/2 cup powdered sugar

1/4 cup ghee

1 tsp. vanilla extract

Chocolate Drizzle:

1/4 cup Lily's Dark Chocolate Chips

1 tsp. coconut oil

Instructions:

Prepare cake according to instructions on box. To make the icing, place all ingredients in a large bowl and mix with a hand blender until ingredients are mixed well (about 1 minute). Place in the refrigerator while the cake is baking. When the cake is done remove it from the oven and let it cool completely. Once it has cooled, use your hands or a spoon to mash it up. Transfer the cake crumbles directly into the bowl of icing and mix it all together. Use an ice cream scoop to scoop out balls onto a parchment lined baking sheet. Place the sheet in the refrigerator for at least 30 minutes. To make the chocolate drizzle, place the chocolate chips and coconut oil in a small bowl. Heat in the microwave for 30 seconds, stir, and then heat 30 more seconds. Drizzle on top of the cake balls right before serving!
