The other day I was feeling really unmotivated to go to the grocery, but I was i n the mood to bake! So I went to the kitchen, found a sweet potato and a couple extra ripe bananas , and got to it! The end result? These delicious, thick, ~ moist ~ bars!!!! I’m shocked at how wonderful these turned out. They have a cake like texture, but a little more dense. The sweet potato and banana are the perfect combo in my opinion! I definitely wanted to add a little something extra on top - so I went with chocolate chips and peanuts for a bit of a crunch!

These bars are gluten free. I used cassava flour to make them, but I haven’t tried any others so not sure how this recipe would turn out with substitutes! I personally love cooking with cassava flour because it’s so light and makes baked goods fluffy. I am most definitely making these bars again - I hope you love them as much as I did!

Sweet Potato Banana Bars

These bars are absolutely delicious! Gluten free, thick, moist - perfect! Made with sweet potatoes, bananas, cassava flour, and topped with honey roasted peanuts + dark chocolate chips! These are the perfect treat.

Ingredients

  • 1 medium size sweet potato
  • 2 ripe bananas 
  • 2 eggs
  • 1/4 cup coconut sugar
  • 1 tsp. cinnamon 
  • 1 tsp. nutmeg 
  • 1 cup cassava flour 
  • 1/4 tsp. pink pink Himalayan sea salt 
  • 1 tsp. baking soda 
  • 1/2 cup honey roasted peanuts 
  • 1/2 cup dark chocolate chips 

Instructions

  1. Use a fork to poke holes all around sweet potato. Wrap it in foil and bake at 375°F for 1 hour. After an hour cut the potato in half, if it needs a little bit longer to cook put it back in for ~10-15 more minutes. You want it pretty soft.
  2. After the potato has cooked, set it aside and let it fully cool (at least 15 minutes). Once it's cool enough to handle, peel the skin off. Place the potato in a large bowl with the 2 bananas and use a fork or masher to mash them together.
  3. Add eggs and coconut sugar to bowl. Use a hand mixer to beat together the ingredients really well.
  4. Add in cinnamon, nutmeg, cassava flour, sea salt, and baking soda. Use a spatula to gently stir it all in together.
  5. Transfer to a well greased (or parchment lined) 8x8 baking dish.
  6. Crush the peanuts and mix them together with the chocolate chips. Spread out evenly on top of the mix and then lightly press down so it sticks when baking.
  7. Bake at 350°F for 25 minutes.
