Restaurant Style Spicy Shrimp Quesadilla

 
 
 

These spicy shrimp quesadillas are in-cred-ible (dashes for emphasis). Quesadillas are so good, but so simple. You can get creative with them and add so many different things! Onions, black beans, chicken, spinach, bell peppers - the list goes on! The secret though? You have to use the right cheese.

In the past I’ve used a shredded blend of Mexican cheese, and there’s absolutely nothing wrong with that. In fact it’s quite delicious and nostalgic in my opinion. That said… this time I used oaxaca cheese and wowwww. Talk about gooey melty delicious-ness! I don’t think I can use any other cheese moving forward. I also want to try it on melty nachos!

Flour tortillas - I am usually a big fan of corn tortillas, but for a quesadilla flour tortillas are the way to go (in my opinion).

Oaxaca cheese - When I decided to make a REALLY good quesadilla to share with you all I started googling the best cheese to use. I came across oaxaca which I had never heard of before, but was promised the perfect melty texture and delicious taste. So I went for it, and it did not disappoint.

Spicy shrimp - I looove shrimp in quesadillas. Especially spicy shrimp. I used a simple cajun seasoning to give it a kick.

“Special Sauce” - Okay I have been making this for years and I put it on everything. It’s so simple, and I know it sounds weird, but just trust me. I put it on hash browns, breakfast burritos, potatoes, and now quesadillas.

Additional toppings - To make this true “restaurant style” you’ve gotta add the classic toppings. Shredded lettuce, tomato, and of course guacamole!

Restaurant Style Spicy Shrimp Quesadilla

These restaurant style spicy shrimp quesadillas are incredible! The oaxaca cheese and special sauce really takes them to the next level!

Ingredients

  • 1/2 lb shrimp cut into thirds
  • 1 tsp cajun seasoning
  • 1 tbsp olive oil
  • 2 burrito size flour tortillas
  • Oaxaca cheese
"Special Sauce"
  • 1/3 cup plain full fat Greek yogurt
  • 1 tbsp hot sauce
  • Juice of 1/2 lime
Additional Toppings
  • Shredded iceberg lettuce
  • Roma tomato cubed
  • Guacamole

Instructions

  1. Heat 1/2 tbsp olive oil in skillet over medium heat.
  2. Add shrimp and let cook 2-3 minutes. Stir and then cook 2-3 more minutes. Remove from heat.
  3. Fill half tortilla with shrimp and cheese, fold over.
  4. Heat 1/2 tbsp in skillet over medium heat. Add tortilla to skillet until crispy and golden, flip and let brown on other side. Make sure cheese is melted inside. Remove from heat.
  5. For the “special sauce”, mix together all ingredients. Top quesadillas with sauce, lettuce, tomato, and guacamole.
