Chocolate Peanut Butter Oatmeal Cookies
Sign me up for anything with chocolate and peanut butter. It’s one of my favorite combos for sure! These chocolate peanut butter oatmeal cookies are just divine, and so so easy to make. As I’m writing this it’s a high of 30 degrees and a low of 15… so it’s the perfect day to make cookies and curl up on the couch. I have to admit, this winter has been pretty mild, which I’m grateful for, but I’m ready for spring. I need longer days and some sun rays in my life! I digress. In the meantime… make these cookies! Chocolate Peanut Butter Oatmeal Cookies
These chocolate peanut butter oatmeal cookies combine all of the best flavors. They are so simple to make and absolutely delicious.
Ingredients
- ½ cup unsalted butter room temp
- ½ cup brown sugar
- ⅓ cup granulated sugar
- ½ cup peanut butter
- 1 egg
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- ¾ tsp baking soda
- ¼ tsp salt
- 2 tbsp unsweetened cocoa powder
- 1 1/4 cup rolled oats
Instructions
- Preheat oven to 350F.
- Use a hand mixer to beat together butter, brown sugar, granulated sugar, and peanut butter in a large bowl until smooth.
- Add eggs and vanilla and continue to mix.
- Add flour, baking soda, salt, and cocoa powder and beat on low until well combined.
- Use a spatula to stir in the oats.
- Form balls (~1.5 tbsp) and place on parchment lined baking sheets (for reference I was able to make ~25.
- Bake for 10 minutes and transfer to cooling rack. Only bake one tray at a time.
