Snickerdoodle Squares
If you’re like me and staying in this New Years Eve (as I assume most of us are) then you’ll definitely want to make these Snickerdoodle Squares. If there’s one thing I’ve worked on and actually gotten better at this past year, it’s my baking skills. Trust me I am still NOT a pro by any means, but I’ve gotten better about measurements and creating goods that actually taste good (lol). I would definitely say these squares were a perfect way to end the year. They turned out so incredibly delicious. I was laying in bed the other morning before the sun even rose thinking about what I wanted to make (as normal people do…) and these popped in my head!
One of my favorite discoveries of 2020 is cassava flour. I started using it as an alternative when baking and I have to say it creates the lightest, fluffiest texture. It’s a great gluten free option for baking, and that’s what I used in this recipe. I have not tried any alternatives, and in my experience it is a very unique flour because it is so light, so I have no idea what would work best in it’s place! If you do some experimenting and it turns out you will have to let me know.
You can’t skimp on the topping of this bread! While the inside is perfectly moist and delectable the topping really tops it off (literally). The cinnamon and sugar are such a nostalgic feeling to me (makes me think of my grandpas cinnamon toast) and it just tastes delicious the way it bakes in. I really hope you like these as much as I do!
Snickerdoodle Squares
Ingredients
- 1/2 stick unsalted butter at room temp
- 1/2 cup coconut sugar
- 2 eggs
- 1/4 cup syrup
- 3 tbsp. plain greek yogurt
- 1/4 tsp. pink Himalayan sea salt
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- 1/4 tsp. baking soda
- 3/4 cup cassava flour
- 2 tbsp. coconut sugar
- 1 tsp. cinnamon
Instructions
- Preheat oven to 350°F.
- Place butter, coconut sugar, eggs, and syrup in a large mixing bowl. Use an electric hand mixer to beat the ingredients together for about 1 minute.
- Add the Greek yogurt, salt, cinnamon, and vanilla to the bowl. Use a spatula to mix together well.
- Add in the flour and baking soda. Continue to mix together with a spatula and then transfer to a well greased 8x8 baking dish.
- Mix the sugar and cinnamon for the topping together. Sprinkle it evenly on top of the batter.
- Bake for 18 minutes. Let cool completely and then cut into squares.
