Potato, Bacon, & Chive Egg Bites
We have been on our breakfast meal prep game lately, and it has been so helpful throughout the week! I love having something on hand that we can quickly grab and heat up, but is also satiating. Our go to has been homemade english muffin breakfast sandwiches with sausage, egg, and cheese - but we decided to switch it up this week!
I first made these potato chive egg bites about a year ago when they were released at Starbucks, but I switched up the recipe a little bit this time. The first time I made them I used heavy cream instead of cottage cheese, but the cottage cheese definitely made them more fluffy and boosted the protein! However, if cottage cheese is not your jam, you can use heavy cream and they are still delicious. The Starbucks version doesn’t have bacon, but I think it really adds a great flavor with the potatoes and cheddar. Of course, if you want to make these vegetarian you can leave it out.

Potato, Bacon, & Chive Egg Bites
These fluffy egg bites are packed with tender potatoes, crispy bacon, chives, and melty cheddar cheese for a savory, protein filled breakfast. They are a great meal prep item to reheat throughout the week!
Ingredients
- 6 pieces of bacon
- 1 lb (2 medium size) butter potatoes
- 10 eggs
- 1/2 cup cottage cheese
- 1/2 cup shaved cheddar cheese
- 1 tbsp. dried chives
- salt & pepper to taste
Instructions
- Preheat oven to 400°F. Place bacon on a foil lined baking sheet. Bake for 20 minutes or until crispy. Place bacon on paper towel lined plate to remove extra grease, chop into small pieces & set aside.
- Wash and peel potatoes. Cut into small cubes. Place in pot and fill with water until potatoes are covered. Bring to a boil and boil for 15 minutes or until potatoes are fork tender. Drain and set aside.
- In a large bowl whisk together eggs, cottage cheese, cheddar cheese, chives, and salt & pepper. Then stir in bacon and potatoes.
- Use a ladle to scoop mixture into a greased silicone muffin pan.
- Bake at 375°F and bake for 27 minutes. Let cool completely before removing from muffin pan. Enjoy!
