Blueberry Oat Bars with White Chocolate Drizzle
When I recently visited family in Kentucky my Mom had purchased some blueberry oat bars from Target for P to snack on. They were delicious, and he absolutely loved them. Of course, you know me, I knew I wanted to try and make them at home. I have so much fun in the kitchen playing with ingredients and coming up with recipes!
These bars are made with a few simple ingredients that you might already have on hand at home. I used freeze dried blueberries but you could definitely get creative with the filling and use other fruits or even chocolate chips. These were super simple to make, and I have a feeling we’ll be making some version of them on a weekly basis for school snacks because P absolutely devoured them!

Blueberry Oat Bars with White Chocolate Drizzle
These chewy blueberry oat bars are the perfect snack! Not only are they delicious, but they are actually filling. They're loaded with oats and milled chia seeds to keep you satiated. Plus they have the perfect amount of sweetness from syrup, freeze fried blueberries, and a creamy white chocolate drizzle on top.
Ingredients
- 2 cups old fashioned oats
- 1 tsp. baking powder
- 1/4 cup milled chia seeds
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 eggs
- 1/3 cup milk
- 1/4 cup syrup
- 1 tsp vanilla
- 1/2 cup freeze dried blueberries, chopped
- 1/4 cup white chocolate chips
- 1/2 tsp. coconut oil
Instructions
- Preheat oven to 350°F.
- In a large bowl mix together the oats, baking powder, milled chia seeds, cinnamon, and salt.
- In a separate bowl whisk together the milk, eggs, syrup, and vanilla.
- Pour the wet ingredients in with the dry ingredients. Mix well and then set aside for 10 minutes to let the oats absorb some of the liquid.
- Add the chopped freeze dried blueberries and stir into the mixture.
- Pour the oat mixture into a parchment lined 8x8 baking dish and spread out evenly.
- Bake for 25 minutes. Once they are done baking, carefully remove them from the pan and sit them on a cooling rack to cool for at least 10 minutes.
- Combine the white chocolate chips with the coconut oil and melt in the microwave. Drizzle the melted white chocolate on top of the bars and then cut. Makes 8 bars.
