Pistachio Crusted Salmon
Last week when I was visiting Kentucky I had the absolute best salmon at a local winery. If you know me, you know I love salmon, but this pistachio crusted salmon especially blew me away! I immediately knew I had to recreate it to share, and when I say I nailed it - I really did. I looked up the menu to find the ingredients used and got cooking. I honestly can’t wait to make this again!
Pistachio crusted salmon with fresh parsley and lemon zest is a delicious dish that features a tender and juicy salmon fillet coated in a crunchy layer of crushed pistachios, breadcrumbs, and flavorful seasonings. The addition of fresh parsley and lemon zest adds a bright and citrusy flavor to the dish, perfectly complementing the richness of the salmon and the nuttiness of the pistachios. Bread crumbs - I used a plain bread crumb mixture (not panko) for this. I would suggest not using a seasoned one because it might overpower the other flavors!
Pistachios - These speak for themselves. You’ve gotta have them for this recipe and if you’ve never used them in a recipe before - you’re in for a treat! Highly suggest buying ones with the shells off to save you time. :)
Fresh parsley - The fresh parsley really makes this feel like a summery dish and adds a light herby flavor.
Lemon zest - Citrus and salmon go together like peanut butter and jelly. Lemon zest is the adds the perfect amount of tang and flavor.
Pistachio Crusted Salmon
Ingredients
- 1/4 cup breadcrumbs
- 1/4 cup pistachios
- Zest of 1/2 lemon (~1 tsp.)
- 1 tbsp. loosely packed fresh parsley
- 3 tbsp. olive oil
- Dash of salt and pepper
- 2 salmon fillets (~1/2 lb each)
Instructions
- Preheat oven to 450°F.
- Place breadcrumbs, pistachios, lemon zest, parsley, olive oil, and salt and pepper in a food process.
- Blend for ~45 seconds or until mixed well.
- Place salmon in a greased baking dish.
- Use your hands to lightly press the crumb mixture all over the salmon fillets.
- Bake for 15 minutes. Best served fresh!
