Blueberry Lemon Bread
Y’all I went on a journey with this bread. I had a vision of using jam and fresh blueberries, but the first time I made it it did not turn out great! Don’t worry, no bread went to waste, it just wasn’t good enough to share. Lucky for you all I did not give up on the bread and here we are with a delicious end product.
Full fat Greek yogurt - Greek yogurt is great to add to baked goods to keep them from drying out.
Lemon juice - Oh yeah baby, we’re adding lemon juice right to the bread to add a little tang.
Fresh blueberries and blueberry jam - Should I have called this double blueberry bread?! Maybe. The fresh blueberries and blueberry jam pair together for the ultimate bread.
Blueberry Lemon Bread
This blueberry lemon bread is the perfect spring recipe. It's fluffy, moist, and not only does it have fresh blueberries it also has a swirl of blueberry jam baked into the middle. You will love it!
Ingredients
- 1 stick unsalted butter room temp
- 1 cup sugar
- 2 eggs
- 1/2 cup full fat Greek yogurt
- Juice of 1/2 lemon
- 1/3 cup milk
- 1.5 cups all purpose flour
- 1 tsp baking sada
- 1/2 tsp salt
- 1 cup blueberries + 1 tbsp flour
- 2 tbsp blueberry jam
Instructions
- Preheat oven to 350 °F.
- Add butter, sugar, and eggs to a bowl. Use a hand mixer to beat together.
- Add in Greek yogurt, lemon juice, and milk and continue to to use hand mixer to mix together.
- Add in flour, baking soda, and salt. Stir in with a spatula.
- In a separate bowl mix blueberries with 1 tbsp flour.
- Add blueberries to the batter and stir in with a spatula.
- Add half of the batter to a greased loaf pan.(Pro tip: save the butter wrapper and use it to grease the pan).
- Add the blueberry jam and use a butterknife to swirl it and spread it out, but do not mix it fully into batter
- Add the remaining batter to the pan.
- Bake for 55 minutes. Best served fresh and warm!
