Pasta Salad
It’s almost summertime, and that means you can cue all the cool (literally) recipes! I will be the first to say my taste buds heavily rely on the weather. Cold outside? Give me all the soups and warm drinks. Warm? I’m here for the smoothies and chilled dishes. I have also been trying to make large dishes like this at the beginning of the week to pack for lunches. If you’re like me and you’re starting to be in the mood for summertime dishes, look no further than this delicious pasta salad.
Pasta salad has just a few simple ingredients, but has sooo much flavor! I used fusilli pasta, purple onion, tomatoes, salami (specifically a garlic and cracked black pepper salami), green bell pepper, mozzarella cheese, and a homemade oil based dressing. Mixed all together these ingredients are so delicious. Trust me, you will definitely impress your friends if you show up to the neighborhood BBQ with this dish this summer!
A couple notes before we dive into the recipe. I used fusilli pasta for this but you could also use other shapes like rotini, bowtie, or penne. Instead of green bell peppers you could use banana peppers, and you could always add more ingredients like black olives, cucumbers, or whatever your heart desires! As with most of my recipes, I hope you will get creative, use ingredients you have on hand, and find inspiration from what I post on my page but also make it your own.
Pasta Salad
Ingredients
- 1 12 oz box fusilli pasta
- 1/2 purple onion chopped fine
- 1 green bell pepper chopped
- 4 oz. salami cut into small pieces
- 4 oz. mozzarella pearls
- 2 roma tomatoes chopped
- 1/3 cup olive oil
- 1/4 tsp. garlic powder
- Juice of 1 lemon
- 4-5 fresh large basil leaves chopped fine
- Dash of salt and pepper
Instructions
- Prepare the pasta according to the instructions on the box. Drain it and rinse with cold water.
- Add the chopped veggies, salami, and cheese to the pasta.
- Place all of the ingredients for the dressing together in a small jar and shake well. Pour it on top of the pasta salad and mix it all up. Enjoy!
