Bacon, fig, & goat cheese flatbread
It’s been a while since I’ve share a new recipe on my website! I have definitely missed it. Since moving, trying to get settled, seeing clients, having personal time, and exploring our new city - recipes have been somewhat on the back burner. I have realized though I really miss this as a creative outlet so I hope to dip my toes back in. Starting with this incredible flatbread!
Fig season is coming to an end so definitely make this while you can. I planned on making it two weeks ago, but I bought figs at the grocery store and the very next day they were molded. Then the next weekend I bought them again (at a different grocery store), and the same thing happened! We aren’t just talking a little bit of mold, I mean the whole package was full on moldy. Any tips for this?! Anyways I went a bought some the same day I made this flatbread to guarantee they would be fresh.
While this flatbread has some great star ingredients (hello - bacon, figs, goat cheese), those actually aren’t my favorite part. The base of this is the real star of the show. It’s a mixture of ricotta, sage, and a whole head of roasted garlic - need I say more?! This recipe absolutely knocked my socks off, I hope you love it as much as I do!
Bacon, fig, & goat cheese flatbread
Ingredients
- 1/3 cup ricotta
- 4 large fresh sage leaves
- 3 tbsp. olive oil
- 1 head garlic
- 1 package pre-made dough (I like Trader Joes or Whole Foods)
- 6 pieces of bacon
- 5 large figs
- 2 oz (1/2 log) goat cheese
- Honey
Instructions
- Preheat oven to 450°F. Place bacon on a foil lined baking sheet and bake for ~15 minutes or until crispy.
- You can prepare the roasted garlic at the same time. Cut the bottom 1/4 off of a head of garlic. Place in aluminum foil and drizzle with 1 tbsp. olive oil. Wrap up in the foil and place in the oven to roast for 30 minutes.
- When the garlic is done, place it in a blender with the ricotta, sage, and 2 tbsp. olive oil. Blend together.
- Roll out the dough very thin on a floured surface. Oil a 13x18" baking sheet and transfer the dough, using your hands to spread it out to each corner. (TIP: set the dough out 1-2 hour in advance so it is easier to roll out)
- Use a spatula to spread the ricotta "sauce" evenly. Chop the bacon into small pieces and slice the figs. Spread out evenly on the dough. Crumble the goat cheese.
- Bake for ~13 minutes, broil for 2-3 minutes. Drizzle with honey.
