No Bake Peanut Butter Pie with Chocolate Ganache
Growing up I absolutely loved peanut butter pie. I mean I loved it so much that for my birthdays I would ask my Mom to make me a peanut butter pie instead of getting me a birthday cake. So yeah, I really liked it. Now I still love it, and I don’t wait for a special occasion to have it. So last week on a random day when I decided I was in the mood for it, I made it! This time I decided to make it extra special and add a swirl of chocolate ganache which really took the flavor to another level.
I think there are a couple of keys to make a really good peanut butter pie. For the filling I like to use a more natural peanut butter that’s super creamy and has a more runny consistency. Then I like to make a homemade whipped cream. You can totally use store bought, but I promise you homemade is sooo easy to make (literally only 2 ingredients) and just tastes so good. Also, it’s super nostalgic to me because my grandma always made it growing up. So maybe that’s why I’m bias!
Okay okay, let’s get to the chocolate ganache. This isn’t required, and the pie tastes great without it. So if chocolate isn’t your thing feel free to omit. Buuuutttt…. I highly recommend. This was my first time making it this way and I don’t think I can go back.
You can totally make a homemade crust if you want to go the extra mile, but honestly I think a graham cracker crust saves the hassle and it’s delicious.
Oh! And did I mention you don’t have to bake it?! Yeap, you just mix all of the ingredients and refrigerate overnight. You can find the video for this recipe here.
Peanut Butter Pie with Chocolate Ganache
Ingredients
- 1 graham cracker crust
- 1 cup peanut butter
- 1 brick cream cheese (8 oz)
- 1/2 cup powdered sugar
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- 1/2 cup heavy whipping cream
- 1/2 cup semi sweet chocolate chips
Instructions
- In a large bowl use a hand mixer to mix together peanut butter, cream cheese, and 1/2 cup powdered sugar.
- In a separate bowl use a hand mixer to mix together cold whipping cream and 3 tbsp powdered sugar. Mix for ~5 minutes or until cream starts to thicken and can form peaks.
- Stir the whipped cream into the peanut butter mixture with a spatula.
- For the ganache, place chocolate chips in a bowl. Heat heavy cream in sauce pan over medium heat until it starts to simmer, do not bring to a boil. Immediately remove from heat and pour over chocolate chips. Let sit 5 minutes and then whisk together. Let sit 5 more minutes to thicken.
- Stir into peanut butter mixture but don’t mix all the way in, leave some swirl!
- Transfer mixture to a graham cracker crust.
- Refrigerate overnight.
- Slice and enjoy!
