You guys! I know this seems like such a simple basic salad, because honestly it kind of is. That said - it’s incredible and you really should make it. It is served at one of Lexington Kentuckys most well known restaurants, Malones, as well as their sister restaurant, Drakes. I can’t even tell you how many times I ordered this salad in college with a side of french fries. Oh and don’t even get me started on their bread they serve with herb butter - to die for!!! But I’ll save that for another day… This salad is a mix of iceberg lettuce, chopped tomatoes, crispy bacon, and a homemade herb dressing.

Lexingtonian Salad

A homemade version of the famous Lexingtonian salad from Malones in Lexington, KY. Crunchy iceberg lettuce, chunks of tomato, crispy bacon, and a homemade herb dressing. Absolutely delicious!

Ingredients

Salad
  • 1 small head of iceberg lettuce
  • 3 roma tomatoes
  • 8 pieces of bacon
Dressing
  • 1/2 cup plain Greek yogurt
  • 1 tsp. red wine vinegar 
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tbsp. loosely packed fresh dill, finely chopped
  • 1 tbsp. water

Instructions

  1. Chop lettuce, cut tomatoes into cubes, and place in a large bowl.
  2. Preheat oven to 400°F. Place bacon on a parchment lined baking sheet and bake for 20 minutes. Once it's done remove it from the pan and pat it with a paper towel to remove some of the grease. It should be pretty crispy and easy to chop up into small pieces. Once it's chopped add it to the bowl.
  3. For the dressing, place each ingredient in a bowl and mix well. Pour on top of the salad and mix it all up!
