Lexingtonian Salad
You guys! I know this seems like such a simple basic salad, because honestly it kind of is. That said - it’s incredible and you really should make it. It is served at one of Lexington Kentuckys most well known restaurants, Malones, as well as their sister restaurant, Drakes. I can’t even tell you how many times I ordered this salad in college with a side of french fries. Oh and don’t even get me started on their bread they serve with herb butter - to die for!!! But I’ll save that for another day… This salad is a mix of iceberg lettuce, chopped tomatoes, crispy bacon, and a homemade herb dressing.
Lexingtonian Salad
A homemade version of the famous Lexingtonian salad from Malones in Lexington, KY. Crunchy iceberg lettuce, chunks of tomato, crispy bacon, and a homemade herb dressing. Absolutely delicious!
Ingredients
Salad
- 1 small head of iceberg lettuce
- 3 roma tomatoes
- 8 pieces of bacon
Dressing
- 1/2 cup plain Greek yogurt
- 1 tsp. red wine vinegar
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tbsp. loosely packed fresh dill, finely chopped
- 1 tbsp. water
Instructions
- Chop lettuce, cut tomatoes into cubes, and place in a large bowl.
- Preheat oven to 400°F. Place bacon on a parchment lined baking sheet and bake for 20 minutes. Once it's done remove it from the pan and pat it with a paper towel to remove some of the grease. It should be pretty crispy and easy to chop up into small pieces. Once it's chopped add it to the bowl.
- For the dressing, place each ingredient in a bowl and mix well. Pour on top of the salad and mix it all up!
