Layered Fajita Pie
Okay okay, I know the name of this dish sounds crazy, but just trust me on it! I love classic fajitas but I wanted to add a bit of a twist, plus add some extra flavor. That’s what led me to this layered fajita pie. You start by cooking your chicken in flavorful spices and then sautéing your peppers and onions. Next you made a delicious high protein cheese sauce to go on top. The sauce is made with cottage cheese, shredded white cheddar, and green chiles. It adds a nice boost of flavor and protein to the dish! Finally you’ll layer everything together: tortillas, refried beans, chicken, onions and bell peppers, the homemade cheese sauce, and even more cheese sprinkled on top. You’ll pop it in the oven to bake for a few minutes to let all the flavors marinate together and get the the cheese nice and gooey. This is a dish the whole family will enjoy!

Layered Fajita Pie
This flavorful fajita skillet is layered with soft tortillas, refried beans, seasoned chicken, sautéed bell peppers & onions, and a delicious homemade high protein cheese sauce made with cottage cheese, white cheddar cheese, and green chiles. It's a twist on classic fajitas that the whole family will love!
Ingredients
- 1 lb boneless skinless chicken breasts, cut into bite size cubes
- 1 tbsp. olive oil
- 2 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 1 tbsp. olive oil
- 2 bell peppers, sliced
- 1/2 yellow onion, sliced
- 1 cup cottage cheese
- 1 cup freshly shredded white cheddar cheese
- 1 (4 oz) can of green chiles
- 3 soft tortillas
- 1 can of refried beans
- 1 cup freshly shaved white cheddar cheese
- Fresh cilantro
Instructions
- For the chicken, heat the olive oil in an oven safe skillet over medium high heat.
- Add the chicken and seasonings to the skillet. Mix well to coat the chicken. Let cook about 6 minutes, flip the chicken and let cook 5 more minutes or until cooked through. Flip the chicken as needed to make sure it cooks evenly. Once the chicken is done cooking remove it from the skillet.
- In the same skillet, add 1 tbsp. olive oil and add the sliced bell peppers and onions. Sauté 10-12 minutes, stirring occasionally. Once done sautéing, remove them from the skillet.
- Remove the skillet from the heat and preheat the oven to 350°F.
- For the cheese sauce, place the cottage cheese, shredded cheddar cheese, and green chiles in a food processor and blend until smooth.
- Finally, layer everything together. Place tortillas at the bottom of the skillet and then layer with refried beans, chicken, bell peppers & onions, and the cheese sauce. Top with more shredded cheddar cheese.
- Bake for 20 minutes and then broil for about 3 minutes, watching carefully so the cheese doesn't burn. Remove from the oven when the cheese is golden and bubbly.
- Top with fresh cilantro. Cut like a pie and serve!
