I cannot believe Thanksgiving is this week! I personally prefer ham over turkey when it comes to Thanksgiving. If you’re like me and you have lots of leftovers then you’ll have to try this hot ham & cheese gnocchi bake. It’s a super easy weeknight meal so that you can relax after the holiday. The “hardest” part is making the cheddar cheese sauce… but I would hardly even say that is hard to do! You simply boil the gnocchi, steam some broccoli (I did a steam bag in the microwave to keep it even easier), chop up some leftover ham, and mix it all together with the cheddar cheese sauce. It gives me major nostalgic vibes because I loved hot ham & cheese sandwiches growing up. I used ham, but you could definitely use turkey or even rotisserie chicken. I love a simple meal like this and hope you enjoy it too!

Hot Ham & Cheese Gnocchi Bake

This melty gnocchi bake takes the comfort of a classic hot ham and cheese sandwich and turns it into an easy weeknight meal! The pillowy gnocchi is tossed with a creamy cheddar cheese sauce, and then baked with ham and broccoli. It's simple, but delicious!

Ingredients

  • 1 lb gnocchi, cooked and drained
  • 1 bag steamed broccoli (10.8 oz) (~2 cups chopped)
  • 1 cup ham, diced
Cheese Sauce
  • 2 tbsp. butter
  • 2 tbsp. all purpose flour
  • 1.5 cups whole milk
  • 1.5 cup freshly shaved cheddar cheese
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • salt and pepper to taste

Instructions

  1. Prepare the gnocchi, steamed broccoli, and chop the ham. Place in a casserole dish.
  2. For the cheese sauce, melt the butter in a sauce pan over medium heat. Add the flour and whisk for about 1 minute until it is a golden color. Slowly whisk in the milk. Whisk continuously for about 4 minutes until it is bubbling and thickened. Remove from heat and stir in the cheese, garlic powder, paprika, and salt and pepper. Stir until creamy.
  3. Pour the cheese sauce on top of the other ingredients in the casserole dish.
  4. Preheat oven to 325°F and then bake for 15 minutes.
