Each week as I’m deciding what recipes I want to make and what groceries I need to get I ask my husband what he’s in the mood for. This weekend he suggested I try to make a homemade version of Hamburger Helper Beef Stroganoff! Truthfully, I had never even had the Hamburger Helper version, but I was up for the challenge. The difference between a traditional beef stroganoff and the Hamburger Helper version is the meat. The traditional version has cuts of beef, while the Hamburger Helper version uses ground beef. I decided to stick with that for my recipe! I added in more vegetables and the homemade sauce was really easy to make. I think this will become a new staple meal in our home, it’s absolutely delicious and I hope you enjoy it too!

Homemade Hamburger Helper Beef Stroganoff

This Homemade Hamburger Helper Beef Stroganoff is comfort food at its finest! It's a classic dish that has the addition of mushrooms, carrots, and spinach all mixed with the traditional rich and creamy sauce. It's a twist on the version you know and love that will become a family favorite in your home!

Ingredients

  • 12 oz package of wide egg noodles
  • 1 lb. ground beef
  • 2 tbsp. butter
  • 1/2 yellow onion, diced fine
  • 2 large carrots, peeled and chopped
  • 2 cloves minced garlic
  • 8 oz baby Bella mushrooms, sliced
  • 1/2 cup Greek yogurt
  • 1 large handful of spinach
Sauce
  • 2 cups beef broth
  • 1 tbsp. Worcestershire sauce
  • 1/4 cup flour

Instructions

  1. Prepare pasta al dente according to package instructions, drain and set aside for later use.
  2. Whisk together all ingredients for the sauce and set aside for later use.
  3. Cook ground beef in a deep skillet* (see note) for 8-10 minutes or until cooked through. Remove the ground beef from the skillet and place on a paper towel lined plate to absorb extra grease.
  4. Melt butter over medium heat in skillet. Add onions, carrots, garlic, and salt & pepper to taste. Let sauté 5 minutes, stirring occasionally.
  5. Add mushrooms to the skillet and let sauté 5 more minutes, stirring occasionally.
  6. Turn up heat on skillet to medium high. Pour in the sauce and let simmer 5 minutes.
  7. Turn the heat down to medium low. Stir in the Greek yogurt.
  8. Finally add the ground beef back to the skillet, and stir in the noodles and spinach.

Notes

You will need a deep skillet for this recipe to mix everything together. If you do not have one you can prepare the meat, vegetables, and sauce and pour it over the pasta in a separate bowl at the end.
