Homemade Hamburger Helper Beef Stroganoff
Each week as I’m deciding what recipes I want to make and what groceries I need to get I ask my husband what he’s in the mood for. This weekend he suggested I try to make a homemade version of Hamburger Helper Beef Stroganoff! Truthfully, I had never even had the Hamburger Helper version, but I was up for the challenge. The difference between a traditional beef stroganoff and the Hamburger Helper version is the meat. The traditional version has cuts of beef, while the Hamburger Helper version uses ground beef. I decided to stick with that for my recipe! I added in more vegetables and the homemade sauce was really easy to make. I think this will become a new staple meal in our home, it’s absolutely delicious and I hope you enjoy it too!
Homemade Hamburger Helper Beef Stroganoff
Ingredients
- 12 oz package of wide egg noodles
- 1 lb. ground beef
- 2 tbsp. butter
- 1/2 yellow onion, diced fine
- 2 large carrots, peeled and chopped
- 2 cloves minced garlic
- 8 oz baby Bella mushrooms, sliced
- 1/2 cup Greek yogurt
- 1 large handful of spinach
- 2 cups beef broth
- 1 tbsp. Worcestershire sauce
- 1/4 cup flour
Instructions
- Prepare pasta al dente according to package instructions, drain and set aside for later use.
- Whisk together all ingredients for the sauce and set aside for later use.
- Cook ground beef in a deep skillet* (see note) for 8-10 minutes or until cooked through. Remove the ground beef from the skillet and place on a paper towel lined plate to absorb extra grease.
- Melt butter over medium heat in skillet. Add onions, carrots, garlic, and salt & pepper to taste. Let sauté 5 minutes, stirring occasionally.
- Add mushrooms to the skillet and let sauté 5 more minutes, stirring occasionally.
- Turn up heat on skillet to medium high. Pour in the sauce and let simmer 5 minutes.
- Turn the heat down to medium low. Stir in the Greek yogurt.
- Finally add the ground beef back to the skillet, and stir in the noodles and spinach.
Notes
You will need a deep skillet for this recipe to mix everything together. If you do not have one you can prepare the meat, vegetables, and sauce and pour it over the pasta in a separate bowl at the end.
