Banana Bread Layered Brownies
Two of my favorite things are banana bread and brownies! Last week I had two overripe bananas and it hit me to make a combination of banana bread AND brownies. Once the idea was in my head I couldn’t stop thinking about it, so here we are with this perfect banana chocolatey bread. This is so easy to make because you start with the same base, split the batter in half, and then add different ingredients to get the banana bread and the brownies - this prevents having to do too many extra steps but you still get both flavors!
I really wanted to keep the flavors distinct so instead of mixing or swirling them I literally just layered the brownie batter on top of the banana bread batter. It turned out soo delicious, we’ve been snacking on it all week!
Banana Bread Layered Brownies
Ingredients
- 1 stick unsalted butter room temp
- 1 cup sugar
- 2 eggs
- 1/2 cup full fat Greek yogurt
- 1 tsp vanilla
- 1.5 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 overripe bananas
- 1/4 cup butter
- 1/2 cup chocolate chips
- 3 tbsp. cocoa powder
Instructions
- Preheat oven to 350 °F.
- Add butter, sugar, and eggs to a bowl. Use a hand mixer to beat together.
- Add in Greek yogurt and vanilla, continue to to use hand mixer to mix together.
- Add in flour, baking soda, and salt, use spatula to mix well.
- Transfer half of the batter to a separate bowl.
- Mash the bananas and stir them into one of the bowls of batter.
- For the brownie batter, melt the butter and chocolate chips together in a small sauce pan over the stove top. Once it's melted together whisk in the cocoa powder. Remove from heat and pour the chocolate mixture into the second bowl of batter. Mix well.
- Pour the banana bread batter into a well greased 8x8 baking dish. Pour the brownie batter on top of the banana bread. Bake at 350° for 38 minutes.
- Let cool completely, remove from pan, and cut into squares. Enjoy!
