Grilled Garlic Butter Rainbow Trout
Summer is officially here! Okay okay… technically not “officially” until June 21st, but I consider Memorial Day weekend the start of summer. Not too mention, it’s been close to 90 degrees here… I think it’s safe to say it’s summer. With summer comes lots of cookouts. We’ve been loving have friends over to grill out before it gets too hot and the mosquitos come swarming. We’ve already grilled burgers, chicken, steak, bratwurst, and this weekend we decided to whip out some of the rainbow trout I was gifted from Fish Fixe.

I’m not gonna lie, before making this grilled rainbow trout I had never made it before, to be honest I’m not even sure if I’d ever eaten if before?! I do know this tasted delicious and I will certainly be purchasing again. I kept this very simple and rubbed the fish with a homemade garlic butter, then wrapped it in foil and placed it on the grill. I served it with herbed rice and a salad and it was the perfect summer meal.
Rainbow trout filets - I used 2 ~6 oz filet portions. I know it’s common for people to grill a whole rainbow trout, but again I used mine from Fish Fixe… and also I don’t know if I could prepare that. :/
Room temp butter - Room temp butter is absolutely necessary for homemade garlic butter. Make sure to sit it out a few hours in advance so it’s nice and creamy when you are ready to use it.
Fresh minced garlic - You could use a garlic powder but in my opinion nothing beats fresh garlic, especially in a recipe where it’s one of the main ingredients.
Dried parsley & dried dill - These are the perfect seasonings for a light and refreshing summer meal, and they compliment the fish perfectly,
Grilled Garlic Butter Rainbow Trout
Ingredients
- 2 6 oz. portions of rainbow trout
- 2 tbsp. room temp butter
- 2 cloves minced garlic
- 1/2 tsp. dried parsley
- 1/4 tsp. dried dill
- Dash of salt
Instructions
- Heat grill to about 475°F and then turn down to 300°F.
- Mix butter, garlic, parsley, dill, and salt in a small bowl.
- Place the fish on a large piece of foil.
- Use a brush or your hands to rub the butter mixture on the flesh side of the fish.
- Fold the foil making a foil packet.
- Place on grill for 15 minutes.
- Remove and serve fresh!
