Crockpot Carne Asada

If you're in the mood for a hearty meal - look no further! This rainy weather and quarantine mode has got me feeling some type of way, and I've been in the mood for some comfort food. The other day I made this delicious carne asada in the crockpot and it totally hit the spot. I love making things in the crockpot because it's minimal prep and makes your entire home (okay I live in a small apartment...) smell amazing. We love Mexican food and carne asada has a fresh summer flavor to it. You can serve it with tortillas or follow the recipe below for homemade fries as well!

Ingredients:

Carne Asada:

1.5 lb. flank steak

1/4 white onion chopped

Juice of 1 orange

Juice of 1/2 lime

1 tsp. cumin powder

1/2 tsp. paprika

1 tsp. garlic powder

1 tsp. chili powder

1/2 cup beef bone broth

French Fries:

2 russet potatoes

1.5 tbsp. avocado oil

1/2 tsp. paprika

1/2 tsp. onion powder

1/2 tsp. cumin powder

1/2 tsp. chili powder

1/2 tsp. garlic powder

Salt & pepper to taste

Guacamole:

1 large avocado

Bunch of fresh cilantro (chop and add to your liking!)

1/8 white onion chopped fine

Juice 1/2 lime

Salt to taste

Instructions:

For the carne asada, put the steak in a crockpot and all of the seasonings + chopped onion. Pour in the bone broth and place on low for 4 hours. After 4 hours pull out the steak and slice it, place it back in the crockpot for one more hour.

For the french fries, wash the potatoes and chop them into the shape of fries. Put them in a large bowl, and add the seasonings + avocado oil. Mix well and then place in a single layer on a parchment lined baking sheet. Bake at 375°F for 50 minutes, flipping halfway through.

Mix all ingredients together in a bowl for the guacamole! When all is done layer the french fries with the carne asada, guacamole, and greek yogurt! Yum, enjoy!!!

*Note for the bone broth leftover: I didn't want to pour the broth over the fries because I didn't want them to get soggy, but don't let it go to waste! Save it for a soup or slurp it right out of a mug to reap the benefits.
