Cheesy Chicken and Broccoli
I bought chicken last week with intentions of making an orange chicken recipe. Halfway through the week I realized it just wasn’t happening, and it was such a busy week I only wanted to make super simple meals! I threw the chicken in the freezer so it wouldn’t go bad and by the time I thawed it out yesterday, I was craving a completely different meal. Cue this lightly crusted chicken with a creamy, cheese sauce tossed with steamed broccoli.
Y’all, I am not kidding, if a recipe is not enough for leftovers or I know it won’t taste great reheated, I am not making it these days. It is so worth it to me to take just a couple of hours on Sunday to make things I can reheat throughout the week. Chicken, salmon, veggies, & pasta dishes are some of my go to. Chicken - this chicken is lightly crusted with a gluten free all purpose flour.
Fresh shaved parmesan cheese - I always say this, but don’t use store bought shaved parmesan - shave it yourself I swear it tastes better!
Califia Farms Better Half - I use this half and half often in recipes. It’s not because I can’t have dairy (obviously, there is cheese in this recipe), but I actually like the taste of this.
Cheesy Chicken & Broccoli
Ingredients
- 1.5 lb. boneless skinless chicken tenders
- 1/2 cup gluten free all purpose flour
- 1/2 tsp. garlic powder
- Salt and Pepper
- 3 tbsp. butter
- 1 1/4 cup Califia Farms Better Half
- 1 cup fresh shaved parmesan
- 1 tsp. arrowroot powder
- 3 cups broccoli
Instructions
- Chop the chicken into 1/2" cubes.
- Place flour, garlic powder, and salt and pepper into a large bowl. Add the chicken and coat evenly.
- Melt butter in a skillet over medium heat. Add the chicken to the pan and let cook 10 minutes, flip and let cook about 8 more minutes or until it is cooked all the way through.
- While the chicken is cooking, use your preferred method to steam the broccoli and then set it aside.
- Once the chicken is cooked, add the Califia Farms Better Half and the parmesan cheese to the skillet. Mix well and then let simmer for 3 minutes.
- In a small dish mix the arrowroot powder with 1 tsp. warm water. Add this to the skillet and mix well. Let simmer one more minute.
- Turn the heat down to low and stir in the broccoli. I served mine with quinoa and it was absolutely delicious!
