I love a good, simple pad Thai! There is nothing better than a simple but delicious meal that is packed with flavor. I kept this dish vegetarian and I love the taste of the brussels sprouts with the sauce. The key to this recipe is also using the pad Thai rice noodles. I know it’s easy to think you can do a swap but trust me, you’ll want to stick with these!

This meal came together in half an hour and was so filling. I am constantly trying to come up with recipes that not only taste good, but are convenient to make and this checks all the boxes. I hope you guys love it as much as I do!

Brussels Pad Thai

This Brussels Pad Thai is so simple to make, yet full of flavor! It comes together in half an hour and will quickly become a weeknight staple in your home. The flavors mix together seamlessly!

Ingredients

  • 1 lb. brussels sprouts
  • 1 shallot 
  • 1 tbsp. avocado oil 
  • 1/2 cup brown sugar 
  • 1/2 cup water 
  • 3 tbsp. fish sauce
  • 1 tbsp. soy sauce
  • 2 tbsp. rice wine vinegar 
  • Juice of 1 lime 
  • 1 pack pad Thai rice noodles 

Instructions

  1. Wash and chop the brussels sprouts in half, and finely slice the shallot. 
  2. Heat the avocado oil over medium heat in a deep skillet. Add the Brussels and shallot and let cook for 10 minutes, stirring every couple minutes. 
  3. Place the sugar and water in a small pot and bring to a low simmer. Let it simmer for about 15 minutes, stirring occasionally.  
  4. Remove the sauce from the heat and stir in the rice vinegar, fish sauce, soy sauce, and the juice of the lime. 
  5. Prepare noodles according to package. Drain and add them to the skillet with the brussels. 
  6. Pour the sauce in the skillet and mix well. Let sit over low heat for a couple of minutes for the sauce to marinate in the veggies and noodles. Enjoy!
