Unstuffed Bell Pepper Skillet

It’s back to school season which means we’re all looking for quick, easy, and delicious dinners to feed our families! Stuffed bell peppers are absolutely delicious… but if I can save a step by not stuffing them, I’m going to do it. This skillet is full of flavor, makes plenty for leftovers, and it’s all cooked in one skillet so it’s easy to clean up. It’s also the perfect dish to transition to fall (yes, I am ready for fall!) because it has fresh flavors but also feels super cozy. This skillet has all the flavors you’re looking for in a stuffed bell pepper like Italian sausage, mushrooms, onion, parsley, oregano, and of course gooey cheese. Unstuffed Bell Pepper Skillet

This unstuffed bell pepper skillet is cozy and flavor packed. It's loaded with bell peppers, mushrooms, and savory Italian sausage. It has gooey shredded mozzarella cheese mixed in to bring it all together. This will be a go to weeknight meal!

Ingredients

  • 1 lb. mild Italian sausage
  • 1 tbsp. olive oil
  • 2 cloves minced garlic
  • 1/2 yellow onion, diced
  • 4 medium size bell peppers, diced
  • 1/2 tsp. oregano
  • 1/2 tsp. parsley
  • Dash of salt & pepper
  • 8 oz baby bella mushrooms, sliced
  • 1.5 cups cooked brown rice (I used a bag of frozen brown rice to keep this recipe super simple)
  • 1.5 cups shredded mozzarella cheese

Instructions

  1. Heat skillet over medium heat. Add sausage to the skillet and use a spatula to break apart. Let cook 8-10 minutes, stirring occasionally, until browned. Remove from skillet and place on a paper towel lined plate to absorb extra grease.
  2. Heat olive oil in the same skillet over medium heat. Add garlic and let simmer 1 minute, it will become fragrant.
  3. Add in the onion, bell peppers, parsley, oregano, and a dash of salt and pepper. Stir and let sauté 5 minutes.
  4. Stir in mushrooms and let sauté 10 more minutes, stirring occasionally.
  5. Add the rice, shredded cheese, and the sausage back to the skillet. Stir together and remove from heat after 1-2 minutes when the cheese has melted in. Top with more cheese (if you'd like) and enjoy!
