Tortellini with Ricotta Tomato Basil Sauce

Do you love simple meals with lots of flavors? Me too! That’s why I love this tortellini dish with homemade ricotta tomato basil sauce. Cherry tomatoes are practically overflowing from my grandmothers garden! So I’ve been trying to get creative using them. Of course there’s the simple caprese salad that you cannot go wrong with, but they are also fun to cook with. My favorite Italian restaurant in San Diego had a creamy tomato sauce, I believe there’s was mixed with cream cheese but I love ricotta so I decided to make something similar!

This is truly such a simple dish. You just place the tomatoes, garlic, and onion in the oven and then blend it up with ricotta and basil. Pour on top of your tortellini for a decadent dish.

Tortellini with Ricotta Tomato Basil Sauce

Creamy and savory homemade ricotta tomato basil sauce over tortellini and zucchini. A simple dish full of flavor that everyone will love!

Ingredients

  • 12 oz cherry tomatoes 
  • 1/2 yellow onion roughly chopped
  • 1 head of garlic 
  • 4 tbsp. avocado oil 
  • 3 chopped zucchini 
  • Handful of fresh basil
  • 1 cup ricotta cheese 
  • Salt and pepper 
  • 2 packages spinach and cheese tortellini 

Instructions

  1. Preheat oven to 450°F.
  2. Cut off the bottom 1/4 of the head of garlic. Place it upside down in an 8x8 baking dish. Add in the cherry tomatoes and the chopped onion.
  3. Drizzle with 2 tbsp. avocado oil and sprinkle with salt and pepper. Mix well, cover with foil, and place in the oven for 30 minutes. 
  4. Immediately transfer the tomatoes and onion to a high speed blender, and squeeze in the garlic cloves as well. Add in the ricotta cheese and fresh basil leaves. Blend on high until it is all mixed well and has formed a sauce. 
  5. Heat 2 tbsp. avocado oil in a skillet over medium heat. Chop zucchini into 1/2" pieces. Place the zucchini in the skillet and let cook, stirring occasionally, for about 10 minutes. 
  6. Prepare the tortellini according to the instructions on the package and then transfer to the skillet with the zucchini. 
  7. Pour the sauce on top and mix well. Add more fresh ricotta and basil on top for serving.
