Texas Sheet Cake

If you’ve never had Texas sheet cake you are definitely missing out! My grandma made this all the time growing up because it’s one of my grandpas favorite desserts. It’s a rich, chocolatey cake that is, you guessed it, baked on a sheet pan. It’s a thin cake with a delicious chocolate icing on top. The cake itself has a hint of cinnamon and is very moist. The icing on top is super fudge-y and rich! This cake always makes me think of Thanksgiving and Christmas because that’s when my grandma would make it. It’s so cozy warmed up a little bit with homemade whipped cream on top.

Ingredients

Cake
  • 2 cups all purpose flour
  • 2 cups white sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 cup water
  • 1 stick butter
  • 1/2 cup canola oil
  • 4 tbsp. cocoa powder
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tbsp. vanilla
Icing
  • 1 stick butter
  • 4 tbsp. cocoa powder
  • 6 tbsp. milk
  • 1 tbsp. vanilla
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 400°F.
  2. Add flour, sugar, cinnamon, and baking soda to a large bowl and mix together.
  3. Place water, butter, oil, and cocoa in a small pot over medium heat. Whisk together and bring to a boil.
  4. Remove from heat as soon as it starts boiling and stir into the flour mixture.
  5. In a separate small bowl whisk together the buttermilk, eggs, and vanilla. Add to the rest of the cake batter and use a spatula to mix together well.
  6. Pour the batter into a well greased 12"x16" baking sheet. Bake for 20 minutes.
  7. Prepare the icing in the last ~5 minutes that the cake is baking. Place the butter, cocoa powder, milk, and vanilla in a small pot over medium heat. Whisk together until melted. When the sides start to bubble remove from heat, do not bring to a boil.
  8. Immediately add the powdered sugar to the pot and whisk in.
  9. Pour the icing on top of the cake and spread out with a spatula. Let sit for about 15 minutes and then cut into squares. Enjoy!
