This ravioli with truffle sauce is INCREDIBLE. I threw it together last week, but remade it yesterday to measure it out and perfect the recipe. It is rich yet light all at the same time. You’ll just have to try it to see what I mean! It * very lightly * drizzled here yesterday which made me so happy, and this was the perfect cozy meal for a gloomy day. Not too mention, you can make it in 15 minutes - swear!

Let’s talk about the ingredients! I used a mix of parmesan and gruyere cheese for the sauce. I seriously love the flavor of gruyere, but l wanted to add some parmesan as well so it wasn’t too overpowering. I used the truffle seasoning from Trader Joe’s for the truffle flavor. A little goes a long way which is why I stuck with only 1/2 tsp. for this recipe, if you feel like you want a bit more - go for it! Lastly, I used Califia Farms Better Half instead of regular half and half because I like that it’s not quite as heavy. If you prefer regular half and half that is fine.

Spinach Ravioli with Truffle Sauce

Creamiest dreamiest truffle sauce with sautéed spinach and baby tomatoes. With a mixture of gruyere, parmesan, and a hint of truffle seasoning - this is the perfect decadent dinner.

Ingredients

  • 1 pack spinach ravioli 
  • 1 tbsp. avocado oil 
  • 1 cup cherry tomatoes 
  • 2 cloves minced garlic 
  • 3/4 cup Better Half
  • 1/2 cup freshly shaved parmesan 
  • 1/2 cup freshly shaved gruyere 
  • 1/2 tsp. truffle seasoning
  • 1/2 tsp. arrowroot powder + 1/2 tsp. warm water 
  • 1-2 large handfuls of spinach 

Instructions

  1. Prepare ravioli according to package, drain, and set aside.
  2. Heat avocado oil in a deep skillet over medium heat. Add cherry tomatoes. Use a potato smasher to just lightly mash them, you don't actually wan't them mashed just break the skin. Let simmer 3 minutes.
  3. Add minced garlic and let sauté 30 seconds. 
  4. Pour in Better Half, both of the cheeses, and the truffle seasoning. Let simmer 3 minutes.
  5. Mix the arrowroot powder and the warm water in a small bowl and pour it into the skillet to thicken the sauce a bit. Let that simmer 1 minute. 
  6. Mix in the spinach and let wilt, should only take about 30 seconds. 
  7. Remove the skillet from the heat and pour in the ravioli. Top with a little bit more fresh parmesan and fresh black cracked pepper!
