Spinach Artichoke Dip

Anyone else’s TV been taken over by football lately?! I don’t watch sports but I am here for the snacks that go along with it. I debated calling this best ever spinach artichoke dip because honestly I’ve had my fair share of this dish and I can truly say this is magnificent. Add this to your list of Sunday staples - whether you’re watching sports or watching Netflix this is a must.

I used Greek yogurt as the the base, versus cream cheese that you see traditionally in this dip. I personally really like the Stonyfield plain whole milk yogurt. I think it has a great thick consistency, and a good creamy taste as well. Of course you can use your choice of yogurt, but I don’t recommend using a low fat version for this. For the artichokes I used Cynara grilled artichoke hearts. I like the added seasoning, but you don’t necessarily have to use those.

We served them with Siete tortilla chips & celery, I also think they would be great with carrots & bell pepper slices! Enjoy!

Spinach Artichoke Dip

Best ever lightened up spinach artichoke dip! Made using Greek yogurt, two types of cheese, garlic, grilled artichokes, and spinach! So delicious, perfect for a game day snack.

Ingredients

  • 2 tbsp. unsalted butter 
  • 2 cloves minced garlic 
  • 1 cup plain Greek yogurt
  • 1 cup fresh shaved parmesan 
  • 1/2 cup shredded mozzarella 
  • 1 14 oz. jar Cynara grilled artichokes 
  • 1 large handful (~1 cup) fresh spinach
  • Salt and pepper 

Instructions

  1. Place butter in a saucepan over medium heat. Once it has melted and is a bit foamy add in the minced garlic and let simmer 30 seconds. 
  2. Turn the heat down to low and add in the Greek yogurt, both cheeses, and a dash of salt and pepper. Stir it until the cheese has completely melted in. 
  3. Drain the jar of artichokes and roughly chop them. Add the artichokes and the spinach to the sauce. Stir well until the spinach has started to wilt in, a couple of minutes. 
  4. Make the sure the heat is turned down very low and place a lid on the pot for about 2 minutes just to let everything melt together a bit more. Serve with chips or veggies!
