Smashed Pesto Potatoes
The best side dish for an easy weeknight meal! These are great to serve with chicken, salmon, or even burgers! Such a simple recipe full of flavor.
Ingredients
- 1 lb fingerling medley potatoes
- pesto (I used my homemade spinach pesto)
Instructions
- Bring a pot of water to a boil. Boil potatoes 13 minutes.
- Drain and put on a parchment lined baking sheet. Use the bottom of a cup to smash the potatoes.
- Brush pesto on each potato, don’t hold back on how much you use!
- Bake at 425° for 22 min.
