Shrimp Ceviche

Not to toot my own horn, but… toot toot! This shrimp ceviche is amazzzze! Tastes like summer in a bowl, & with the hot temperatures around here lately I think we could all use that! I love the lemon lime juice mixed in and marinated with the veggies - so refreshing! I’ll probably keep a bowl of this in my refrigerator at all times from now on. It is so simple to make, and such a great appetizer to pull out for entertaining guests. Hope you enjoy this! You can also find a video tutorial for this recipe here.

Ingredients:

1 lb. precooked shrimp chopped into small pieces(you don’t have to use precooked, but if you use raw be sure to boil it before adding it to the recipe!)

1 cucumber diced small

2 roma tomatoes diced small

1/4 red onion chopped

1/2 cup fresh cilantro finely chopped

Juice of 5 limes

Juice of 2 lemons

Salt & Pepper to taste

1/2 avocado cubed

Instructions:

Mix all ingredients (EXCEPT FOR AVOCADO!!!) in a large bowl. Cover it and place in a refrigerator for at least 3 hours (I think the longer the better, it gives the dip more time to marinate). When you are ready to serve it, mix in the avocado cubes. Enjoy with tortilla chips!
