Pepperoni Pizza Rolls
I was on the phone with my sister the other day and she told me she was making pizza rolls - I immediately made it my mission to make a homemade version because how delicious! I made a super simple dough in the food processor, added marinara sauce, pepperonis, and fresh mozzarella cheese. The nostalgia!!!! It’s one of my favorite things recreating childhood favorites. It is nice to know the ingredients being used but more than that I truly have so much fun getting creative in the kitchen and encouraging others to do the same. This would be so fun to make with the whole family, and as soon as I can see my niece & nephew again I think we’ll give these a go!
For the dough - I’ve used this dough in a few of my recipes now. I will be the first to admit is nothing close to a traditional dough, but that said I’m not a baker and def don’t claim to be. I found this simple combination works great for what I need! This time I added in some spices to give it more of a pizza crust vibe.
Marinara Sauce - If you want to make a homemade marinara sauce go for it, but for this recipe I just stuck with a jar of store bought! You don’t want to overdo it, 1 tsp. is perfect for each roll.
Mozzarella Cheese - I used fresh cherry size mozzarella cheese balls, cutting them in half, and found that 1 1/2 worked perfect for these.
Pepperonis - I added 2 to each roll, but you can omit if you want to keep these vegetarian!
Pepperoni Pizza Rolls
Ingredients
- 1.5 cups whole wheat flour
- 1/4 cup plain Greek yogurt
- 1/4 tsp. pink Himalayan sea salt
- 1/4 tsp. baking soda
- 1/4 tsp. dried basil
- 1/4 tsp. dried oregano
- 1/4 tsp. garlic powder
- 1/2 cup cold butter sliced
- 1/4 cup cold water
- 8 tsp. marinara sauce
- 16 pepperonis
- Fresh Mozzarella Cherry Size
Instructions
- Preheat oven to 375°F.
- Place all ingredients for the crust in a food processor. Process on low until the dough starts to form into a ball. Remove it from the processor, compress it into a ball, and place it in the refrigerator for 5 minutes.
- Sprinkle some flour on a clean surface. Place the dough on the surface and knead about 10 times. Use your hands to start pressing down and spreading out, then use a rolling pin to continue to roll out, using flour as needed to prevent sticking. Roll until it is about 1/2 centimeter thick.
- Use a round 4" cookie cutter to cut out dough and then place it on a parchment lined baking sheet. Form the scraps into a ball and roll out again, cutting more circles. I was able to get 16 total circles making 8 pizza rolls in all.
- Once you've got the circles cut, it's time to fill them! Cut the small balls of fresh mozzarella in half. Spread 1 tsp. of marina sauce on 8 of the circles, place 2 pepperonis on top of the sauce, and 1 1/2 balls of mozzarella (3 small pieces) on top of that.
- Use your hands to lightly press down the remaining 8 circles of dough to spread them out a bit. Place each one on top of the already filled dough and use a fork to press down around each of the edges so that they stick together.
- Bake for 20 minutes.
