One Pan Lamb, Spinach, & Feta Meatballs with Roasted Vegetables

 
 
 

As I’m typing this I am currently 5 months postpartum with baby number 2. So as you can imagine, having a toddler and a baby at home doesn't leave a ton of time for elaborate meals. Count me out for anything complicated that uses too many ingredients! I need simple, quick, and minimal dishes. That doesn’t mean I want it to be boring or bland though (you will never catch me meal prepping chicken and broccoli…). I have been loving one pan meals that I usually load up with some sort of protein, veggies, and seasonings to give it a good flavor. That’s where this dish comes in!

This sheet meal seriously has soo much flavor, and you can get creative with how you serve it! The eggplant and bell peppers have a delicious taste from cumin and other flavorful seasonings, and the meatballs are divine. They are loaded with chopped spinach and feta, giving them a boost of flavor that perfectly compliments the roasted veggies. I served this with basmati rice, hummus, and homemade tzatziki, but you could also serve it on naan bread or just eat it as is.

One Pan Lamb, Spinach, & Feta Meatballs with Roasted Vegetables

This delicious one pan meal is perfect for busy weeknights. Loaded with a variety of flavors from the eggplant, red bell pepper, and spinach feta lamb meatballs - it's a dish everyone will enjoy.

Ingredients

Roasted Vegetables
  • 1 small eggplant, cubed
  • 1 red bell pepper, diced
  • 3 tbsp. olive oil
  • 1 tsp. cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. coriander
  • 1/4 tsp. salt
Lamb Meatballs
  • 1 lb. ground lamb
  • 1 egg
  • 1 cup spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves minced garlic
  • 1 tsp. cumin
  • 1/4 tsp. salt

Instructions

  1. Preheat oven to 400°F.
  2. For the vegetables, place them on a parchment lined baking sheet. Add the seasonings and olive oil. Use your hands to mix well and evenly spread out the vegetables. Roast the vegetables for 10 minutes.
  3. For the meatballs, add all ingredients to a bowl and use your hands to mix well. Form the meatballs using a heaping scoop with a tablespoon. You should have about 14 meatballs.
  4. Make room on the sheet pan for the meatballs, and then cook everything for 20 more minutes.
  5. You can serve as is or add basmati rice, tzatziki, and hummus. Would also be good served with naan bread. Enjoy!
