Lemon Ricotta Bread

There is nothing I love more than a dessert bread to have at home throughout the week. Something about spring time screams lemon to me, so I knew I had to make this lemon ricotta bread again. It’s perfect to serve for an event such as a shower or Easter, or just to make to snack on.

It’s got a delicious flavor from the lemon and I think the ricotta gives it such a nice texture. You just cannot go wrong with this!

Lemon Ricotta Bread

This lemon ricotta bread is the perfect treat to have this spring. It has the best flavor and the texture is perfection. It's great for events or just to have throughout the week! You and your friends will love this loaf.

Ingredients

  • 1 stick unsalted butter room temp (plus a little more for greasing the pan
  • 1 1/4 cup whole ricotta cheese
  • 1 cup white sugar
  • 3 eggs
  • 1 tsp. vanilla
  • juice of 1 lemon
  • 1 1/2 cups all purpose flour (I have also used gluten free all purpose flour for this recipe and it works great as a 1 to 1 substitute)
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1-2 tbsp. powdered sugar

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl mix the butter, ricotta cheese, and sugar with a hand mixer for ~2 minutes.
  3. Add in the eggs, vanilla, and lemon juice and continue to mix.
  4. Finally, add in the flour, baking powder, and salt and continue to mix.
  5. Once it is blended well, pour the mixture into a 9x5 baking pan that is greased with butter.
  6. Bake for about 55 minutes, or until a fork comes out clean.
  7. Using a fine mesh strainer, sprinkle the powdered sugar on top of the loaf. My suggestion is to serve warm with a drizzle of honey!
