Lemon Caper Pasta
This gloomy weather has been making me super tired, I mean super tired. Like I’m not getting out of bed before hitting snooze a few times - anyone else?! I know I can’t be alone. The weather very much dictates what I’m craving and lately I’ve just wanted comforting foods. So on a rainy day when I had pasta, capers, and lemon sitting around I knew exactly what I had to do - make lemon caper pasta obviously. When I tell you it turned out incredible, you just have to trust me - or try it for yourself! It has the perfect amount of tanginess from the lemon and capers, but the cheese and butter mellow it out and add delicious flavor. You can find the video for this recipe here.
Casarecce noodles - I love these noodles because they are fun, but mostly because soak up all the sauce! Highly recommend giving them.
Butter - The base of this pasta dish is butter so you know it’s gonna be good.
Capers - Capers have a tangy lemony taste and I really love them. They are good on pizza, in seafood dishes, and obviously in pasta.
Lemon juice and lemon zest - Mmmm yup, double the lemon. After all, lemon is in the name.
Shallot and garlic - Shallots and garlic really bring all the flavors together in dishes like this. They add a lot of flavor without being overpowering.
Fresh parsley - Parsley and pasta go together like peanut butter and jelly, they just work. Add parsley to almost any pasta dish and you will amp up the flavor!
Fresh shaved parmesan - Adding parmesan cheese to pretty much any dish makes it better, I think freshly shaved is best!
Lemon Caper Pasta
Ingredients
- 4 tbsp. unsalted butter
- 1/2 shallot sliced thin
- 3 cloves minced garlic
- Salt & pepper
- 2 tsp. capers
- 1 tsp lemon zest
- Juice of 1/2 lemon
- 1-2 tsp fresh parsley chopped fine
- 8 oz casarecce noodles
- 1/2 cup fresh shaved parmesan cheese
Instructions
- Prepare noodles according to package instructions and sit aside for later use.
- Heat butter in skillet over medium heat. Once it’s melted add shallots, garlic, and salt & pepper to taste. Let cook for 2 minutes.
- Add capers, lemon zest, lemon juice and let cook ~3 more minutes, stirring often.
- Stir in parsley and let cook 1 more minute.
- Finally add pasta and cheese, let cheese melt in for a few seconds and remove from heat. Enjoy!
